Sivan & Shavuot vegan blueberry ice cream

We begin the month of Sivan during which we celebrate Shavuot, when the Israelites received the Torah at Mount Sinai. It is customary to eat dairy on this holiday. But, there are lots of delicious ways to enjoy Shavuot without eating dairy.

One way is with the the vegan blueberry ice cream recipe that I created for the holiday. There were loads of fresh blueberries available while I was recently in Chicago. I mixed lots of these blueberries with some coconut milk, a couple of bananas and several dates so it’s naturally sweet and doesn’t require any added sugars.
