I created this charoset recipe to use one of my favorite flavor combinations, along with many of the dried berries and fruits I love, such as goji berries, barberries, cherries, elderberries and raisins. But, you could really use any combination of your favorite dried fruits. If you can make this in advance and let it soak overnight, the flavors become more pronounced and the berries plump. It’s hard to believe it has been a year of COVID life and I think about how I was feeling a year ago as we were all adjusting to this new normal way of life. I have taken great comfort in being in my kitchen and preparing foods for others (though I will admit that lately I am growing a bit weary of meal prep). Throughout the past year, as I have shared at times here, I have made food packages for so many people. I normally love having people to my home for meals and in the absence of being able to do so, COVID care packages are as gratifying. Most recently, I furiously baked a zillion loaves of bread and cakes in my favorite COVID purchase (a bright yellow Le Creuset loaf pan) to use up my chametz and gave as packages for family and friends.

Very berry charoset
Ingredients:
1 apple (I used a Pink Lady), finely chopped
2 cups mixed dried plain berries or other fruits (I used goji, elderberry, barberries, cherries and raisins. I would recommend not using fruit with added sugar)
2 tsp date syrup
1 tbsp pomegranate molasses (if you can find kosher or are ok using a non-kosher version that has kosher l’pesach ingredients. Otherwise, use more date syrup.)
1/4 cup grape juice or red wine
1/4 tsp cinnamon
Preparation
- Wash and chop apple.
- Add apple and berries to a bowl.
- Add liquids and cinnamon. Let sit overnight, if possible.
